Ingredients
- All-purpose flour – 270 g
- Baking powder – 2½ tsp
- A pinch of salt
- Butter (softened at room temperature) – 150 g
- Sugar – 250 g
- Eggs (room temperature) – 2 large (approx. 100 g without shell)
- Refined oil – 20 g
- Vanilla essence – 10 g
- Milk (room temperature) – 240 ml
- Icing sugar / powdered sugar – 110 g (for sugar glaze)
- Lemon juice – 25 g (for sugar glaze)
Instructions
- Preheat oven to 170°C and line a cupcake tray with liners
- Sift together flour, baking powder, and salt
- Beat butter until smooth, then add sugar and whip until pale and fluffy
- Add eggs one at a time, mixing well after each addition
- Mix in oil and vanilla
- Alternate dry ingredients and room-temperature milk, mixing gently
- Fill cupcake liners ¾ full
- Bake for 15–20 minutes without opening the oven early
- Cool completely, then finish with sugar glaze or frosting of choice
